The first location the owners have been working on is at 3013 Salem Ave. Yasso said its about 75 percent done and they hope to open in March or April. They also are in the midst of negotiating a location near the University of Dayton. The goal would be to open that location two months later.
The 2,500-square-foot restaurant on Salem Avenue has been in the works for awhile. They first had issues with the architect and now are waiting on the city. The other location could end up opening first, Yasso said.
Prime BBQ offers 11 smoked meats including ribs, pulled pork, pulled chicken and wings. Brisket is the restaurant’s top seller.
“People love the food and people judge it fast,” Yasso said.
There’s a misconception that they don’t smoke the meat on site because customers don’t see the wood or smokers, but Yasso confirmed that they do. In regards to wood, it’s kept inside to stay dry. Each location has two standup smokers where they smoke their meat every night.
All sides are homemade including favorites such as mac and cheese and Cajun rice.
The Salem Avenue restaurant will have tables for customers to dine-in, but its focus will be on carryout especially with it having a drive-thru. Prime BBQ offers delivery via third party such as DoorDash. It’s also a ghost kitchen for Glory Chicken Co.
The owners operate the Happy’s Pizza down the road at 2804 Salem Ave.
Prime BBQ has several locations in Michigan including Highland Charter Twp., Plymouth and Detroit (coming soon). The Monroe restaurant is at 11 American Way.
